VEGETARIAN STUFFING
The ultimate event in fall eating is Thanksgiving, of course, and if stuffing is the side dish you look forward to all year long, you’ll be grateful for this recipe. Lindsay Moe of the Live-In Kitchen has concocted a healthier, vegetarian take on the comforting dish with just a handful of simple ingredients. And it can be customized to be vegan or gluten-free! HEALTHIER PUMPKIN BREAD
Vicky Volvovski also takes a better-for-you approach to a fall classic. The Things I Made Today blogger substitutes maple syrup and olive oil for the typical sugar and butter in pumpkin bread, creating a delectably dense bread that’s perfect for the season.
WILTED BABY KALE AND ROASTED SQUASH WITH APPLE CIDER SAUCE
Sipping apple cider is a fall must-do, but Sujhey Beisser of the Five Senses Palate ups the culinary ante with this dish featuring an apple cider reduction sauce. Roasted squash, wilted kale and sautéed onions and sweet peppers round out this flavorful dinner that Sujhey recommends on its own or alongside a steak.
SWEET POTATO BURGER
If fall equals football for your family, switch up your usual tailgate fare for this easy sweet potato burger by Philia Kelnhofer of the Sweet Phi blog. Mix a sweet potato with black beans — plain, spicy, chili, whatever your preference — and then cook the patties and finish them off with a sriracha mayo sauce, sliced avocado, lettuce and a bun. Score!
